- 2-3 very ripe bananas about 1 1/4 to 1 1/2 cups mashed
- ⅓ cup 76g unsalted butter melted
- ½ tsp baking soda
- 1 pinch salt
- ¾ cup 150g granulated sugar (adjust to your taste)
- 1 large egg beaten
- 1 tsp vanilla extract
- 1 ½ cups 205g all-purpose flour
Preheat your oven to 350°F (175°C) and grease an 8x4 inch loaf pan.
In a large bowl, mash the bananas with a fork until smooth. Stir in the melted butter.
In a separate bowl, whisk together the baking soda, salt, and flour.
Add the dry ingredients to the wet ingredients along with the sugar, beaten egg, and vanilla extract. Mix until just combined, being careful not to overmix.
Pour the batter into your prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Let the banana bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
