Ingredients

For the Chicken:

  • 2 boneless skinless chicken breasts
  • 1 cup buttermilk
  • 1 tbsp olive oil
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ teaspoon onion powder
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 1 cup panko breadcrumbs

For the Sauce:

  • ½ cup mayonnaise
  • ¼ cup sour cream or plain Greek yogurt
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • ½ tsp dried dill
  • ¼ tsp garlic powder
  • Pinch of salt and pepper

For the Sandwich:

  • 2 brioche buns
  • Butter softened
  • Lettuce leaves
  • Sliced tomato optional
  • Red onion optional

Instructions

  • Marinate the Chicken: Let's give the chicken some extra flavor! In a shallow dish, mix the buttermilk, olive oil, spices (paprika, garlic powder, onion powder, salt, pepper) together with a whisk. Gently dip the chicken breasts in this yummy mixture and let them soak for at least 30 minutes. The longer they soak (up to overnight!), the tastier they'll be.

  • Make the Sauce: In another bowl, whisk together all the sauce ingredients: mayonnaise, sour cream (or yogurt), Dijon mustard, lemon juice, dill, garlic powder, salt, and pepper. This creamy mixture will be the star of the sandwich! Set it aside for now.

  • Cook the Chicken: Time to turn on the oven! Preheat it to 400°F (200°C). Now, take the chicken breasts out of the marinade and coat them completely in the panko breadcrumbs. Imagine giving them a delicious golden hug! Place the breaded chicken on a baking sheet lined with parchment paper (this will make cleanup easier). Bake the chicken for 15 minutes, or until it's cooked through and looks golden brown.

  • Toast the Buns: While the chicken bakes, grab your butter and a skillet. Melt the butter on low heat and then toast the brioche buns until they're lightly golden brown. You want them nice and warm for the chicken!

  • Assemble the Masterpiece: Now for the fun part - building your sandwich! Spread some of that delicious sauce you made earlier on the bottom bun. Top it with some fresh lettuce, a slice of tomato (if you're using one), red onion (if you like it), and finally, the juicy, golden brown chicken breast. Pop on the top bun, and admire your creation before taking a big, delicious bite!
