Chocolate Chip Banana Bread Recipe
Mash ripe bananas, and mix with melted butter, sugars, and eggs. Add vanilla extract and dry ingredients (flour, baking soda, salt) until just combined. Fold in most of the chocolate chips, then pour the batter into a greased loaf pan. Sprinkle the remaining chips on top. - 1 ½ cups 380g ripe, mashed bananas (about 3-4 medium)
- ½ cup 100g packed light brown sugar
- ½ cup 100g sugar
- ½ cup 113g unsalted butter, melted and cooled slightly
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup 130g plain Greek yogurt (or sour cream)
- 1 ⅓ cups 180g all-purpose flour
- 1 tsp baking soda
- ¾ cup 140g semi-sweet chocolate chips + handful for sprinkling
Preheat your oven to 325°F (165°C). Grease and line a 9x5 inch loaf pan with parchment paper for easy removal.
In a large bowl, mash those bananas! Aim for a consistency like chunky applesauce.
Get whisking! In a separate bowl, combine the melted butter and both sugars until well blended.
Now it's a party! Add the eggs one at a time, whisking well after each addition. Then, stir in the vanilla extract and mashed banana mixture.
Dry ingredients join the fun! In another bowl, whisk together the flour and baking soda. Gradually add this dry mix to the wet ingredients, folding in gently until just combined.
Chocolate Chip Paradise! Don't forget the star of the show - fold in ¾ cup of those chocolate chips. Reserve some for sprinkling on top.
Pour the batter into your prepared pan and sprinkle the remaining chocolate chips over the top.
Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
