  • 1 pound medium shrimp peeled and deveined (tails on or off, your preference)
  • 2 tbsp olive oil
  • 4 cloves garlic minced
  • 1 ½ cups dry white wine chardonnay or pinot grigio work well
  • 2 tbsp fresh lemon juice
  • ½ tsp dried thyme
  • ½ tsp dried oregano
  • ½ tsp salt
  • ¼ tsp freshly ground black pepper
  • ½ cup unsalted butter cut into cubes
  • 2 tbsp chopped fresh parsley for garnish (optional)
  • Grated Parmesan cheese for serving (optional)

  • Prep the Shrimp: First things first, grab some paper towels and pat those yummy shrimp dry. Season them with a sprinkle of salt and pepper.
  • Shrimp Time: Heat up your olive oil in a big pan over medium heat. Once it's hot, add the shrimp and cook them, stirring once in a while, until they turn pink and aren't see-through anymore (about 2-3 minutes per side). Take them out and set them aside on a plate.
  • Make the Garlicky Goodness: Turn the heat down to medium and add the minced garlic to the pan. Let it cook for about 30 seconds, until fragrant (smells good!), but don't let it turn brown.
  • Extra Flavor: Pour in the white wine and lemon juice. Now, grab a spoon and scrape the yummy bits stuck to the bottom of the pan – that's all flavor! Bring the mixture to a boil, then let it simmer for 4-5 minutes, or until about half the liquid has cooked off.
  • Spice it Up: Add the dried thyme, oregano, salt, and pepper. Let it simmer for another minute.
  • Creamy Magic: Here comes the butter! Slowly whisk in those cubes, a few at a time, until they melt completely and the sauce gets nice and creamy.
  • Reunite the Crew: Put the cooked shrimp back in the pan and toss them around to coat them in that delicious sauce. Heat them up for another minute or two, just to make sure everything is warm and happy.
  • Time to Eat!: Dish up that shrimp scampi and spoon all that garlicky sauce over them. If you want to add a final touch, sprinkle some fresh parsley on top.
